Some information for anybody else experiencing this:
After raising a support ticket and initially being told that the leap team could not replicate the interference happening I conducted tests in several different locations and recorded a video of the issue which I passed on to the leap team. I have just received the following response from leap support: "I've spoken with our engineering team and, unfortunately, there doesn't seem to be much that can be done to prevent this from happening on our end as the issue appears to lie with the Vive tracker. I would recommend contacting Vive support too see if anything can be done to minimize interference from IR devices."
So unfortunately it doesn't look like there is a solution to this issue.
