How to Store Data and Normalize it (Leap V2, Python 2.7)

I am new to Python & leap motion and have been experimenting it with now for a while now for my Universit Project. But I can't seem to figure out How to Store Data frames in excel Files and then Normalize it so I can make an ML Model using EfficientNet(CNN). I am receiving the data from the Leap Motion device but I am not able to figure out how to store the Data frames (hand, finger, bone). So I would appreciate some suggestions, advice, and Guidance,

I t is to my understanding that we have to create an event using a button and then use two instructions to start and stop the execution of a loop. and the logic behind that, I can't figure that out atm.
